Spicy Peanut Pasta Salad

This is a perfect summer lunch,and it’s healthy, delicious, and full of healing veggies. Serves 4

  1. 1/2 box of whole grain linguini  boiled in salted water, drained, and set aside
  2. 1 container of already cooked chicken breast sliced
  3. half a cup of peanut sauce store bought or homemade
  4. 1 lime
  5. Crushed Garlic
  6. Olive oil
  7. honey
  8. Salt and pepper
  9. red pepper flakes
  10. half a cucumber quartered and sliced
  11. 1 Serrano chili pepper very thinly sliced
  12. 3 green onions diced
  13. a big handful of shredded carrots
  14. a big handful of bean sprouts
  15. small handful of snow peas
  16. cilantro

Pour your peanut sauce into a large bowl. Squeeze an entire lime(large) or 4 small, into the bowl. Pour a spoonfull of honey on top that, followed by some olive oil, salt, pepper, and red pepper flakes. Stir it up! Measurements are up to you, season it  to your liking. Now into the bowl throw in the prepared chicken, and the cooled cooked pasta. Now throw in all the veggies and herbs and mix well. Chill and enjoy after lounging in the sun. Perfect with fresh icey blended limeade sweetened with (truvia and honey)

OMG Strawberries & Cream

I love these little laughing cow wedges, and when I saw these strawberry and cream ones in my aunts fridge last week, I died! I could not wait to get off work the next day to go buy some,but my aunt suprised me at work with them, with multigrain crackers, and strawberries. Whats not to love, its yummy, healthy, and it’s baby pink wrapped up in a gold package. So when you get the munchies and you want to eat something cute and low in calories, this is perfect. I will come up with some recipes soon and post them.

Sempre tem jeito

Life can get really hard and we can all fall into a depression, but how we chose to deal with the pain is what makes us stronger and better people. I have been traveling to Brasil for the past ten years and I fell in love with how they live their lives. Sempre tem jeito …there’s always a way. I love that saying, because no matter how little money you have you can still sit down and enjoy a hot cup of coffee in the morning, fresh flowers, or a long walk along the beach.  Laughing with friends, family, or strangers is also free! I have been going thru some hard times with money, and a bad breakup/betrayal from a close friend. So I find my way every day with nature, fresh fruit, tea, movies, books,magazines,getting dressed up,adventures, new friendships, cooking,spending time with family,and making people smile. I have been spending lots of time at my lake because it is my sanctuary, and extremely beautiful, and free!

Strawberry Honey Bunny Yogurt Ice Pop

This is the yummiest easiest healthiest summer dessert ever. So when you go to the market get some fresh fruit(strawberries)and some yogurt(Noosa honey yoghurt). Peaches are good for this pop too, mangoes are the best. Now put away your groceries, make some tea and slice up your fresh fruit. Then throw it in the blender with some honey yogurt, or yogurt and honey, and blend. Now pour it into the Popsicle mold and freeze. Have fun experimenting with different flavors….xoxo

I love lounging in my vintage pjs, watching movies and snacking on fruit in bed. I always try to eat at least 1 grapefruit a day, and cherries are really tasty right now, try the strawberry cherries…..so yummy.

heart of palm summer salad

  1. 1 14 oz can of heart of palm thinly sliced
  2. 1 tomato, thinly sliced
  3. 1 avocado quartered and thinly sliced
  4. 1/4 cup of extra virgin olive oil
  5. 1 tbsp of fresh orange juice
  6. 1 tbsp of fresh lime juice
  7. salt and pepper

On a platter, arrange the hearts of palm, tomato, and avocado  in a single, overlapping layer. Then in a small bowl make your dressing by whisking together the orange and lime juices, olive oil, salt, and pepper. Drizzle over your sexy salad.

Summer Sangria

It’s summer and I am going be making tons of  fun icy drinks.  Being such a wino, sangria is obviously my favorite summer drink ever. Actually all year around. So I am a little famous for sangria because I am always making it, I love it! I love anything that is filled with ice, and fruit, especially water. But I love sangria because it is fun to get buzzed. You can make sangria out of any wine and fruit you have around and just add some sugar, fresh orange juice, and sparkling water or soda. And if your not dieting, add some grand marnier. So here is my healthy version:

Serves 2, or 6 if your boring

  1. 1 bottle of red wine
  2. 1 packet of benifiber raspberry iced tea flavor(you can also use truvia, brown, or just sugar)
  3. 1/2 cup fresh squeezed orange juice (from concentrate or bottle works)
  4. 1 lemon sliced
  5. 1 orange sliced
  6. red grapes rinsed
  7. frozen mango
  8. frozen berries
  9. 1 large bottle of Perieir(or any sparkling water or soda)
  10. ice
  11. 1 apple diced
  12. a pinch of cinnamon

Pour the red wine in a  pitcher or punch bowl, along with the orange juice and benifiber packet, or truvia sugar. Oh and some cinnamon. Mix. Add the sliced lemons, oranges, frozen fruit and grapes. Mix. Pour in mineral water right before serving and mix. Fill your glasses with ice and top with sangria, some fruit, and a lot of diced apple(you will keep eating them). Enjoy! You should serve them in a wine glass, but i like mine in a plastic cup with lots of fruit, ice, and a fun straw. Feels like im on vacation. OMG, soooo good!

This is perfect for when your dieting and get the munchies,  it is a healthy indulgence. I love filling it up with lots of ice, fruit, and tons of apples, so you get full from snacking on them. Plus apples, cinnamon, and berries are all really good for you. the red wine is too….

A Sweet Day Off

I started my day off with coffee, breakfast, and a strawberry cheesecake date with my boyfriend, at the French Bakery. Then we layed out by the pool for hours and headed to the farmers market for a late lunch and a healthy green smoothie.

We picked up some fresh red pepper tomato pesto for tonight  and found an awesome goat cheese vendor, the lavender honey  was my favorite. He also Sells raviolis. I had to get the lavender honey goat cheese Popsicle, because I am obsessed. It was creamy, icy, lavender, honey sweet goodness. I also found out there is a Popsicle boutique on Addams Ave, I will be a regular there soon.

Fruit, cheese, Spanish deli meats, pesto, wine, and a fresh baked baguette for dinner.

Summer Ice Cream Cone

Today was my day off and it really felt like summer and I enjoyed every second of it! I slept in, had some tea and passion fruit yogurt for breakfast, had a good workout at the Gym, then took a long shower with my new lavender soap.Then I went to Ocean Beach with my cute boy for lunch, COFFEE, and to buy some studs from the leather shop. We came home and I put on some Bob Marley and took a nap with the beautiful sunshine and fresh air coming in my window. We woke up and went for ice cream cones and groceries for dinner. Then I made my self some more tea put on a random Jeffrey Star cd I found at work, and organized my clothes. Then I made us a super yummy, healthy dinner, followed by movies in bed and more tea.
