A healthy pineapple coconut shake. Perfect for healthy munchies, a snack, or mini meal. It is really good when you add a scoop of vanilla protein powder.
Buy a fresh pineapple and prepare it. Slice and chop, then freeze half, and refrigerate the other half. Put a large handful of each frozen and fresh pineapple chunks into a blender. Now put in a chopped banana, an 80z box of pineapple coconut water, a splash of unsweetened vanilla soy milk, and some yogurt. Blend!
Toast some shredded coconut for the top for a mini indulgence, plus it smells so good and adds some crunch.
